- Water - 1.5 liters
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Celery - 1 stalk, diced
- Carrot - 1 medium, diced
- Bay leaves - 2
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Oregano - 1 teaspoon
Steps
- In a large pot, combine the beef bones and water. Bring to a boil, then reduce heat and simmer for 30 minutes to create a flavorful broth.
- Add the cleaned beef tripe to the pot along with minced garlic, chopped onion, diced celery, diced carrot, bay leaves, salt, and black pepper.
- Simmer for 1 to 1.5 hours, or until the tripe is tender, skimming any foam that rises to the surface.
- Stir in the chopped cilantro, lime juice, and oregano. Adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with additional cilantro and lime wedges on the side.
