Ingredients

  • Beef tripe - 300 grams, cleaned and cut into small pieces
  • Beef bones - 200 grams (for broth)
  • Water - 1.5 liters
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Celery - 1 stalk, diced
  • Carrot - 1 medium, diced
  • Bay leaves - 2
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Oregano - 1 teaspoon

Steps

  1. In a large pot, combine the beef bones and water. Bring to a boil, then reduce heat and simmer for 30 minutes to create a flavorful broth.
  2. Add the cleaned beef tripe to the pot along with minced garlic, chopped onion, diced celery, diced carrot, bay leaves, salt, and black pepper.
  3. Simmer for 1 to 1.5 hours, or until the tripe is tender, skimming any foam that rises to the surface.
  4. Stir in the chopped cilantro, lime juice, and oregano. Adjust seasoning with additional salt and pepper if needed.
  5. Serve hot, garnished with additional cilantro and lime wedges on the side.
