Ingredients

  • Beef tripe - 300 grams, cleaned and cut into strips
  • Hominy (canned or dried) - 200 grams
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Chili powder - 1 tablespoon
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Water - 1 liter

Steps

  1. In a large pot, bring 1 liter of water to a boil. Add the cleaned tripe and cook for about 10 minutes. Remove the tripe, rinse under cold water, and cut into bite-sized pieces.
  2. In the same pot, add the chopped onion and minced garlic. Sauté for about 5 minutes until translucent.
  3. Return the tripe to the pot. Add the hominy, oregano, cumin, chili powder, salt, and black pepper. Stir well.
  4. Add 1 liter of fresh water to the pot and bring to a boil. Reduce heat to low, cover, and let it simmer for about 90 minutes, stirring occasionally, until the tripe is tender.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro and lime wedges on the side.
