Ingredients
- Beef tripe - 300 grams, cleaned and cut into strips
- Hominy (canned or dried) - 200 grams
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Dried oregano - 1 teaspoon
- Cumin - 1/2 teaspoon
- Chili powder - 1 tablespoon
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Water - 1 liter
Steps
- In a large pot, bring 1 liter of water to a boil. Add the cleaned tripe and cook for about 10 minutes. Remove the tripe, rinse under cold water, and cut into bite-sized pieces.
- In the same pot, add the chopped onion and minced garlic. Sauté for about 5 minutes until translucent.
- Return the tripe to the pot. Add the hominy, oregano, cumin, chili powder, salt, and black pepper. Stir well.
- Add 1 liter of fresh water to the pot and bring to a boil. Reduce heat to low, cover, and let it simmer for about 90 minutes, stirring occasionally, until the tripe is tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro and lime wedges on the side.
