- Calamari - 100 grams, sliced into rings
- Mussels - 200 grams, cleaned and debearded
- Tomatillos - 4 medium, husked and quartered
- Fresh cilantro - 1/4 cup, chopped
- Jalapeño - 1, seeded and chopped
- Garlic - 2 cloves, minced
- Onion - 1/2 medium, chopped
- Olive oil - 2 tablespoons
- Vegetable broth - 1 cup
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- In a blender, combine tomatillos, cilantro, jalapeño, and lime juice. Blend until smooth and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until onion is translucent, about 3-4 minutes.
- Pour the tomatillo mixture into the skillet and cook for 5 minutes, stirring occasionally.
- Add vegetable broth to the skillet and bring to a simmer.
- Add the shrimp, calamari, and mussels to the skillet. Cover and cook for about 5-7 minutes, or until the mussels open and the shrimp are cooked through.
- Season with salt and black pepper to taste. Serve hot with rice or tortillas.
