Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Calamari - 100 grams, sliced into rings
  • Mussels - 200 grams, cleaned and debearded
  • Tomatillos - 4 medium, husked and quartered
  • Fresh cilantro - 1/4 cup, chopped
  • Jalapeño - 1, seeded and chopped
  • Garlic - 2 cloves, minced
  • Onion - 1/2 medium, chopped
  • Olive oil - 2 tablespoons
  • Vegetable broth - 1 cup
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a blender, combine tomatillos, cilantro, jalapeño, and lime juice. Blend until smooth and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until onion is translucent, about 3-4 minutes.
  3. Pour the tomatillo mixture into the skillet and cook for 5 minutes, stirring occasionally.
  4. Add vegetable broth to the skillet and bring to a simmer.
  5. Add the shrimp, calamari, and mussels to the skillet. Cover and cook for about 5-7 minutes, or until the mussels open and the shrimp are cooked through.
  6. Season with salt and black pepper to taste. Serve hot with rice or tortillas.
