- Fish stock - 500 ml
- Lime juice - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Shrimp - 200 grams, peeled and deveined
- Calamari - 100 grams, sliced
- Mussels - 200 grams, cleaned
- Avocado - 1, diced
- Corn tortillas - 2, for serving
Steps
- Heat the olive oil in a large pot over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent.
- Add the diced red bell pepper and cook for an additional 3 minutes until softened.
- Stir in the diced tomatoes and fish stock. Bring the mixture to a simmer, then season with lime juice, salt, and black pepper.
- Add the shrimp, calamari, and mussels to the pot, cooking for about 5-7 minutes or until the seafood is cooked through and the mussels have opened.
- Remove from heat and stir in the chopped cilantro.
- Serve the mariscada hot, garnished with diced avocado and accompanied by warmed corn tortillas.
