Ingredients

  • cooked lentils - 200 grams
  • fresh cilantro - 30 grams, chopped
  • chipotle in adobo sauce - 1 tablespoon, minced
  • garlic - 1 clove, minced
  • onion - 1 small, finely chopped
  • cumin powder - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • whole wheat breadcrumbs - 60 grams
  • olive oil - 1 tablespoon
  • avocado - 1 medium, sliced
  • whole grain burger buns - 2
  • lettuce leaves - 2
  • tomato - 1 medium, sliced

Steps

  1. In a bowl, combine cooked lentils, chopped cilantro, minced chipotle, minced garlic, chopped onion, cumin, smoked paprika, salt, and black pepper.
  2. Mash the mixture with a fork until combined but still slightly chunky.
  3. Stir in the whole wheat breadcrumbs until the mixture holds together. If too wet, add more breadcrumbs.
  4. Form the mixture into two burger patties.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for 5-6 minutes on each side until golden brown and heated through.
  6. Toast the whole grain burger buns lightly on the skillet for 1-2 minutes.
  7. Assemble the burgers by placing a lettuce leaf, a lentil patty, slices of tomato, and avocado on each bun.
