Ingredients

  • Mozzarella cheese - 200 grams
  • White fish fillets (such as cod or tilapia) - 200 grams
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 medium, diced
  • Fresh cilantro - 2 tablespoons, chopped
  • Radishes - 4, thinly sliced
  • Sour cream - 2 tablespoons (for topping)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Add the fish fillets and marinate for 15 minutes.
  3. While the fish is marinating, prepare the cheese tostadas. Line a baking sheet with parchment paper.
  4. Grate the mozzarella cheese and place small mounds (about 50 grams each) on the parchment, spreading them out to form circles. Flatten slightly.
  5. Bake in the preheated oven for 10-12 minutes or until the cheese is melted and golden brown. Remove from the oven and let cool slightly to firm up.
  6. Cook the marinated fish in a non-stick skillet over medium heat for about 4-5 minutes on each side or until cooked through and flaky.
  7. Once the fish is cooked, remove from heat and flake into bite-sized pieces.
  8. To assemble, place the flaked fish on top of the cheese tostadas and top with diced avocado, chopped cilantro, and sliced radishes.
  9. Finish with a dollop of sour cream on top and serve immediately.
