Ingredients

  • Cauliflower - 300 grams
  • Ground beef - 200 grams
  • Olive oil - 2 tablespoons
  • Taco seasoning - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Avocado - 1 medium
  • Tomato - 1 medium
  • Red onion - 1/4 cup, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Sour cream - 2 tablespoons (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Grate the cauliflower using a food processor or box grater until it resembles rice. Steam the cauliflower for 5 minutes until tender.
  3. Place the steamed cauliflower in a clean kitchen towel and wring out excess moisture.
  4. In a bowl, combine the cauliflower with 1 tablespoon of olive oil, salt, and pepper. Mix well.
  5. Spread the cauliflower mixture into two circular shapes on a baking sheet lined with parchment paper, about 1/2 inch thick. Bake for 20 minutes or until golden and crispy.
  6. While the cauliflower is baking, heat the remaining tablespoon of olive oil in a pan over medium heat. Add the ground beef and taco seasoning, cooking until the beef is browned and cooked through, about 7-10 minutes.
  7. Prepare the avocado salsa by mashing the avocado in a bowl and mixing in diced tomato, red onion, cilantro, lime juice, and a pinch of salt.
  8. Once the cauliflower tostadas are done, remove them from the oven and let them cool slightly.
  9. Top each tostada with the seasoned ground beef, followed by a generous scoop of avocado salsa and a dollop of sour cream if using.
