Ingredients
- Cauliflower - 300 grams
- Ground beef - 200 grams
- Olive oil - 2 tablespoons
- Taco seasoning - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Avocado - 1 medium
- Tomato - 1 medium
- Red onion - 1/4 cup, diced
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Sour cream - 2 tablespoons (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Grate the cauliflower using a food processor or box grater until it resembles rice. Steam the cauliflower for 5 minutes until tender.
- Place the steamed cauliflower in a clean kitchen towel and wring out excess moisture.
- In a bowl, combine the cauliflower with 1 tablespoon of olive oil, salt, and pepper. Mix well.
- Spread the cauliflower mixture into two circular shapes on a baking sheet lined with parchment paper, about 1/2 inch thick. Bake for 20 minutes or until golden and crispy.
- While the cauliflower is baking, heat the remaining tablespoon of olive oil in a pan over medium heat. Add the ground beef and taco seasoning, cooking until the beef is browned and cooked through, about 7-10 minutes.
- Prepare the avocado salsa by mashing the avocado in a bowl and mixing in diced tomato, red onion, cilantro, lime juice, and a pinch of salt.
- Once the cauliflower tostadas are done, remove them from the oven and let them cool slightly.
- Top each tostada with the seasoned ground beef, followed by a generous scoop of avocado salsa and a dollop of sour cream if using.
