Ingredients

  • Almond flour - 1 cup
  • Corn extract - 1/2 cup
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Eggs - 2 large
  • Unsweetened almond milk - 1/4 cup
  • Butter - 2 tablespoons, melted
  • Chopped cilantro - 2 tablespoons
  • Cheddar cheese - 1/2 cup, shredded
  • Chili powder - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine almond flour, baking powder, salt, and chili powder.
  3. In another bowl, whisk together the eggs, corn extract, almond milk, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Fold in the chopped cilantro and shredded cheddar cheese.
  6. Spoon the mixture into tamale-style wrappers or small ramekins, leaving some space for expansion.
  7. Place the tamales or ramekins in a baking dish and fill the dish with water until it reaches halfway up the sides of the tamales.
  8. Cover the dish tightly with aluminum foil and bake for 45 minutes or until set.
  9. Let cool slightly before removing and serving warm.
