- Shrimp (peeled and deveined) - 300 grams
- Almond flour - 100 grams
- Shredded mozzarella cheese - 100 grams
- Cream cheese - 50 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1 medium, sliced
- Lime - 1, juiced
- Fresh cilantro - a handful, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the almond flour, shredded mozzarella, cream cheese, egg, garlic powder, cumin, paprika, salt, and black pepper until a dough forms.
- Divide the dough into 4 equal portions and shape each into a flat round for tortillas. Place on a baking sheet lined with parchment paper.
- Bake the tortillas in the preheated oven for 10-12 minutes, or until golden and firm.
- While the tortillas are baking, season the shrimp with salt, pepper, and lime juice.
- In a skillet over medium heat, cook the seasoned shrimp for about 3-4 minutes until they turn pink and are cooked through.
- Remove the baked tortillas from the oven and fill each with cooked shrimp.
- Top with sliced avocado and chopped cilantro.
- Serve immediately with lime wedges on the side.
