Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Almond flour - 100 grams
  • Shredded mozzarella cheese - 100 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 medium, sliced
  • Lime - 1, juiced
  • Fresh cilantro - a handful, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the almond flour, shredded mozzarella, cream cheese, egg, garlic powder, cumin, paprika, salt, and black pepper until a dough forms.
  3. Divide the dough into 4 equal portions and shape each into a flat round for tortillas. Place on a baking sheet lined with parchment paper.
  4. Bake the tortillas in the preheated oven for 10-12 minutes, or until golden and firm.
  5. While the tortillas are baking, season the shrimp with salt, pepper, and lime juice.
  6. In a skillet over medium heat, cook the seasoned shrimp for about 3-4 minutes until they turn pink and are cooked through.
  7. Remove the baked tortillas from the oven and fill each with cooked shrimp.
  8. Top with sliced avocado and chopped cilantro.
  9. Serve immediately with lime wedges on the side.
