Ingredients

  • Poblano peppers - 3 large
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Cream cheese - 120 grams, softened
  • Sour cream - 60 grams
  • Cheddar cheese - 100 grams, shredded
  • Oregano - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Roast the poblano peppers directly over an open flame or under a broiler until the skins are charred and blistered, about 10-15 minutes. Place them in a plastic bag for 5 minutes to steam, then peel off the skins, remove the seeds, and slice into strips.
  3. In a skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. In a mixing bowl, combine the roasted poblano strips, sautéed onions and garlic, cream cheese, sour cream, shredded cheddar cheese, oregano, cumin, salt, and black pepper. Mix until well combined.
  5. Transfer the mixture to a baking dish and spread it evenly. Top with additional shredded cheddar cheese if desired.
  6. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
  7. Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro before serving.
