- Poblano peppers - 3 large
- Olive oil - 1 tablespoon
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Cream cheese - 120 grams, softened
- Sour cream - 60 grams
- Cheddar cheese - 100 grams, shredded
- Oregano - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 190°C (375°F).
- Roast the poblano peppers directly over an open flame or under a broiler until the skins are charred and blistered, about 10-15 minutes. Place them in a plastic bag for 5 minutes to steam, then peel off the skins, remove the seeds, and slice into strips.
- In a skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- In a mixing bowl, combine the roasted poblano strips, sautéed onions and garlic, cream cheese, sour cream, shredded cheddar cheese, oregano, cumin, salt, and black pepper. Mix until well combined.
- Transfer the mixture to a baking dish and spread it evenly. Top with additional shredded cheddar cheese if desired.
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro before serving.
