Ingredients
- Almond flour - 1 cup
- Psyllium husk powder - 2 tablespoons
- Eggs - 2 large
- Shredded mozzarella cheese - 1 cup
- Cream cheese - 50 grams
- Cooked chicken breast, shredded - 150 grams
- Bell pepper, diced - 1/2 cup
- Onion, diced - 1/4 cup
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Sour cream - for serving
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine almond flour, psyllium husk powder, eggs, and a pinch of salt. Mix until a dough forms.
- Divide the dough into two equal portions and roll each into a flat, round tortilla shape.
- In a skillet, heat olive oil over medium heat and sauté the diced onion and bell pepper until softened, about 5 minutes.
- Add the shredded chicken, cumin, chili powder, and salt to the skillet. Stir to combine and heat through for another 3-4 minutes.
- Spread cream cheese evenly over one side of each tortilla, then add the chicken and vegetable filling on top of one tortilla. Sprinkle shredded mozzarella cheese over the filling.
- Carefully place the second tortilla on top, cream cheese side down, to form a quesadilla.
- Transfer the quesadilla to a baking sheet and bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the tortillas are golden.
- Remove from the oven, let cool for a minute, then slice into wedges.
- Serve with sour cream and garnish with fresh cilantro.
