Ingredients

  • Almond flour - 1 cup
  • Psyllium husk powder - 2 tablespoons
  • Eggs - 2 large
  • Shredded mozzarella cheese - 1 cup
  • Cream cheese - 50 grams
  • Cooked chicken breast, shredded - 150 grams
  • Bell pepper, diced - 1/2 cup
  • Onion, diced - 1/4 cup
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Sour cream - for serving
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine almond flour, psyllium husk powder, eggs, and a pinch of salt. Mix until a dough forms.
  3. Divide the dough into two equal portions and roll each into a flat, round tortilla shape.
  4. In a skillet, heat olive oil over medium heat and sauté the diced onion and bell pepper until softened, about 5 minutes.
  5. Add the shredded chicken, cumin, chili powder, and salt to the skillet. Stir to combine and heat through for another 3-4 minutes.
  6. Spread cream cheese evenly over one side of each tortilla, then add the chicken and vegetable filling on top of one tortilla. Sprinkle shredded mozzarella cheese over the filling.
  7. Carefully place the second tortilla on top, cream cheese side down, to form a quesadilla.
  8. Transfer the quesadilla to a baking sheet and bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the tortillas are golden.
  9. Remove from the oven, let cool for a minute, then slice into wedges.
  10. Serve with sour cream and garnish with fresh cilantro.
