Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 100 grams
  • Cooked chicken breast (shredded) - 200 grams
  • Bell pepper (sliced) - 1 medium
  • Onion (sliced) - 1 small
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro (chopped) - 2 tablespoons
  • Sour cream (for serving) - 2 tablespoons

Steps

  1. In a bowl, combine almond flour, half of the mozzarella, and cream cheese. Mix until a dough forms.
  2. Divide the dough into two equal portions and roll each into a thin circle between two pieces of parchment paper.
  3. Heat a non-stick skillet over medium heat. Cook each tortilla for about 2-3 minutes on each side until golden and slightly crispy. Remove from the skillet and set aside.
  4. In the same skillet, add olive oil and sauté the sliced onion and bell pepper until softened, about 5 minutes.
  5. Add the shredded chicken, cumin, paprika, salt, and pepper to the skillet. Stir until heated through and well combined.
  6. Place a tortilla back in the skillet, sprinkle half of the remaining mozzarella cheese on one half, then add the chicken mixture, and fold the tortilla over.
  7. Cook for another 2-3 minutes until the cheese is melted and the tortilla is crispy. Repeat with the second tortilla.
  8. Serve hot, garnished with fresh cilantro and a dollop of sour cream.
