Ingredients

  • Chicken breast - 300 grams
  • Tomatillos - 200 grams
  • Chicken broth - 500 ml
  • Garlic - 3 cloves, minced
  • Onion - 1 small, chopped
  • Cilantro - 30 grams, chopped
  • Jalapeño - 1 small, diced
  • Lime - 1, juiced
  • Avocado - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Radishes - 4, sliced (for garnish)
  • Cabbage - 100 grams, shredded (for garnish)

Steps

  1. In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  2. Add the diced jalapeño and tomatillos to the pot, cooking for another 5 minutes until the tomatillos soften.
  3. Pour in the chicken broth and bring the mixture to a simmer.
  4. Add the chicken breast to the pot, cover, and cook for 20 minutes or until the chicken is cooked through.
  5. Remove the chicken, shred it using two forks, and return it to the pot.
  6. Stir in the chopped cilantro and lime juice, then season with salt and pepper to taste.
  7. Serve hot, garnished with diced avocado, sliced radishes, and shredded cabbage.
