Ingredients
- Chicken breast - 300 grams
- Tomatillos - 200 grams
- Chicken broth - 500 ml
- Garlic - 3 cloves, minced
- Onion - 1 small, chopped
- Cilantro - 30 grams, chopped
- Jalapeño - 1 small, diced
- Lime - 1, juiced
- Avocado - 1 medium, diced
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Radishes - 4, sliced (for garnish)
- Cabbage - 100 grams, shredded (for garnish)
Steps
- In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the diced jalapeño and tomatillos to the pot, cooking for another 5 minutes until the tomatillos soften.
- Pour in the chicken broth and bring the mixture to a simmer.
- Add the chicken breast to the pot, cover, and cook for 20 minutes or until the chicken is cooked through.
- Remove the chicken, shred it using two forks, and return it to the pot.
- Stir in the chopped cilantro and lime juice, then season with salt and pepper to taste.
- Serve hot, garnished with diced avocado, sliced radishes, and shredded cabbage.
