Ingredients

  • Zucchini - 2 medium
  • Poblano peppers - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 120 ml
  • Cream cheese - 60 grams, softened
  • Grated Parmesan cheese - 50 grams
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the poblano peppers on a baking sheet and roast them in the oven for about 15 minutes, or until the skins are blistered and charred. Remove from the oven and let them cool.
  3. While the peppers are cooling, spiralize the zucchini into noodles using a spiralizer or a vegetable peeler.
  4. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the spiralized zucchini noodles to the skillet and sauté for about 3-4 minutes until tender but still al dente. Remove the zucchini noodles from the skillet and set aside.
  6. Once the poblano peppers are cool, peel off the charred skin, remove the seeds, and chop the flesh.
  7. In the same skillet, add the chopped poblano peppers, heavy cream, and cream cheese. Stir well and cook for 3-5 minutes until the sauce is smooth and creamy.
  8. Add the grated Parmesan cheese, and mix until melted and combined. Season with salt and black pepper to taste.
  9. Return the zucchini noodles to the skillet, tossing them in the sauce until well coated.
  10. Serve immediately, garnished with fresh cilantro.
