Ingredients
- Zucchini - 2 medium
- Poblano peppers - 2 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Heavy cream - 120 ml
- Cream cheese - 60 grams, softened
- Grated Parmesan cheese - 50 grams
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Place the poblano peppers on a baking sheet and roast them in the oven for about 15 minutes, or until the skins are blistered and charred. Remove from the oven and let them cool.
- While the peppers are cooling, spiralize the zucchini into noodles using a spiralizer or a vegetable peeler.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the spiralized zucchini noodles to the skillet and sauté for about 3-4 minutes until tender but still al dente. Remove the zucchini noodles from the skillet and set aside.
- Once the poblano peppers are cool, peel off the charred skin, remove the seeds, and chop the flesh.
- In the same skillet, add the chopped poblano peppers, heavy cream, and cream cheese. Stir well and cook for 3-5 minutes until the sauce is smooth and creamy.
- Add the grated Parmesan cheese, and mix until melted and combined. Season with salt and black pepper to taste.
- Return the zucchini noodles to the skillet, tossing them in the sauce until well coated.
- Serve immediately, garnished with fresh cilantro.
