- Almond flour - 75 grams
- Unsalted butter - 50 grams, melted
- Erythritol sweetener - 30 grams
- Egg - 1 large
- Cream cheese - 100 grams, softened
- Lime juice - 60 ml (about 2 limes)
- Lime zest - 1 teaspoon
- Coconut cream - 100 ml
- Baking powder - 1/2 teaspoon
- Vanilla extract - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, melted butter, and 15 grams of erythritol. Mix well until a dough forms.
- Press the almond flour mixture into the bottom and sides of a small pie dish (approximately 20 cm diameter) to form the crust.
- Bake the crust in the preheated oven for 10-12 minutes or until lightly golden. Remove from the oven and let it cool.
- In another bowl, beat the cream cheese until smooth. Add the remaining erythritol, lime juice, lime zest, coconut cream, egg, and vanilla extract. Mix until fully combined and creamy.
- Pour the lime filling into the cooled crust and smooth the top.
- Return the pie to the oven and bake for an additional 15-18 minutes, or until the filling is set and slightly firm to the touch.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 1 hour before serving.
