  • Unsalted butter - 50 grams, melted
  • Erythritol sweetener - 30 grams
  • Egg - 1 large
  • Cream cheese - 100 grams, softened
  • Lime juice - 60 ml (about 2 limes)
  • Lime zest - 1 teaspoon
  • Coconut cream - 100 ml
  • Baking powder - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted butter, and 15 grams of erythritol. Mix well until a dough forms.
  3. Press the almond flour mixture into the bottom and sides of a small pie dish (approximately 20 cm diameter) to form the crust.
  4. Bake the crust in the preheated oven for 10-12 minutes or until lightly golden. Remove from the oven and let it cool.
  5. In another bowl, beat the cream cheese until smooth. Add the remaining erythritol, lime juice, lime zest, coconut cream, egg, and vanilla extract. Mix until fully combined and creamy.
  6. Pour the lime filling into the cooled crust and smooth the top.
  7. Return the pie to the oven and bake for an additional 15-18 minutes, or until the filling is set and slightly firm to the touch.
  8. Remove from the oven and let it cool to room temperature, then refrigerate for at least 1 hour before serving.
