Ingredients

  • Almond flour - 80g
  • Baking powder - 1 tsp
  • Eggs - 3 large
  • Erythritol - 50g
  • Vanilla extract - 1 tsp
  • Unsalted butter - 30g, melted
  • Coconut milk - 100ml
  • Heavy cream - 100ml
  • Unsweetened almond milk - 100ml
  • Erythritol - 30g (for the soaking syrup)
  • Cinnamon - 1/4 tsp
  • Whipped cream - for topping (optional)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small cake pan.
  2. In a mixing bowl, combine almond flour and baking powder.
  3. In another bowl, whisk together the eggs, erythritol, vanilla extract, and melted butter until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until well combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the soaking syrup by combining coconut milk, heavy cream, almond milk, erythritol, and cinnamon in a saucepan over low heat until erythritol dissolves. Do not boil.
  8. Once the cake is baked, remove it from the oven and let it cool for 10 minutes in the pan.
  9. Carefully transfer the cake to a serving plate and poke holes all over the top with a fork.
  10. Slowly pour the soaking syrup over the cake, allowing it to absorb the liquid.
  11. Let the cake sit for at least 30 minutes to soak up the syrup.
  12. Serve with a dollop of whipped cream on top, if desired.
