Ingredients

  • Coconut milk - 400 ml
  • Egg yolks - 2
  • Erythritol - 40 g
  • Vanilla extract - 1 tsp
  • Cinnamon - 1/2 tsp
  • Xantham gum - 1/2 tsp
  • Salt - a pinch

Steps

  1. In a medium saucepan, combine the coconut milk, erythritol, vanilla extract, cinnamon, and salt. Heat over medium heat until just about to simmer, stirring occasionally.
  2. In a separate bowl, whisk the egg yolks until smooth.
  3. Slowly pour about 1/2 cup of the hot coconut milk mixture into the egg yolks while whisking continuously to temper the eggs.
  4. Once tempered, gradually pour the egg yolk mixture back into the saucepan with the remaining coconut milk, whisking constantly.
  5. Add the xantham gum and continue to cook over medium heat, whisking until the mixture thickens, about 5-7 minutes.
  6. Remove from heat and let it cool slightly before transferring to serving dishes.
  7. Chill in the refrigerator for at least 1 hour before serving.
