- Coconut milk - 400 ml
- Egg yolks - 2
- Erythritol - 40 g
- Vanilla extract - 1 tsp
- Cinnamon - 1/2 tsp
- Xantham gum - 1/2 tsp
- Salt - a pinch
Steps
- In a medium saucepan, combine the coconut milk, erythritol, vanilla extract, cinnamon, and salt. Heat over medium heat until just about to simmer, stirring occasionally.
- In a separate bowl, whisk the egg yolks until smooth.
- Slowly pour about 1/2 cup of the hot coconut milk mixture into the egg yolks while whisking continuously to temper the eggs.
- Once tempered, gradually pour the egg yolk mixture back into the saucepan with the remaining coconut milk, whisking constantly.
- Add the xantham gum and continue to cook over medium heat, whisking until the mixture thickens, about 5-7 minutes.
- Remove from heat and let it cool slightly before transferring to serving dishes.
- Chill in the refrigerator for at least 1 hour before serving.
