Ingredients

  • Zucchini - 2 medium (about 300g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Ground cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Cocoa powder - 1 tablespoon
  • Chicken broth - 200 ml
  • Peanut butter - 1 tablespoon (sugar-free)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and diced onion, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Stir in ground cumin, oregano, and cocoa powder, cooking for an additional minute to release the spices' aromas.
  4. Pour in the chicken broth and stir in the peanut butter, mixing well until combined. Let the sauce simmer for about 10 minutes, allowing it to thicken slightly.
  5. Add the zucchini noodles to the skillet and toss to coat them thoroughly in the mole sauce. Cook for another 5-7 minutes until the noodles are tender but still firm.
  6. Season with salt and black pepper to taste. Serve hot, garnished with fresh cilantro.
