Ingredients

  • unflavored gelatin - 2 tablespoons
  • water - 500 ml
  • erythritol - 3 tablespoons
  • lime juice - 2 tablespoons
  • mixed low-carb fruits (such as berries, avocado, or cucumber) - 100 grams
  • lime zest - 1 teaspoon

Steps

  1. In a small saucepan, warm 250 ml of water over low heat and dissolve the erythritol in it.
  2. In a separate bowl, sprinkle the unflavored gelatin over the remaining 250 ml of cold water and let it bloom for about 5 minutes.
  3. Once bloomed, add the warm water with erythritol and stir until fully dissolved.
  4. Remove from heat and mix in the lime juice and lime zest.
  5. Pour the gelatin mixture into a mold or individual serving cups.
  6. Chop the low-carb fruits into small pieces and evenly distribute them into the gelatin mixture.
  7. Refrigerate for at least 2-3 hours or until fully set.
