Ingredients
- unflavored gelatin - 2 tablespoons
- water - 500 ml
- erythritol - 3 tablespoons
- lime juice - 2 tablespoons
- mixed low-carb fruits (such as berries, avocado, or cucumber) - 100 grams
- lime zest - 1 teaspoon
Steps
- In a small saucepan, warm 250 ml of water over low heat and dissolve the erythritol in it.
- In a separate bowl, sprinkle the unflavored gelatin over the remaining 250 ml of cold water and let it bloom for about 5 minutes.
- Once bloomed, add the warm water with erythritol and stir until fully dissolved.
- Remove from heat and mix in the lime juice and lime zest.
- Pour the gelatin mixture into a mold or individual serving cups.
- Chop the low-carb fruits into small pieces and evenly distribute them into the gelatin mixture.
- Refrigerate for at least 2-3 hours or until fully set.
