Ingredients

  • Cream cheese - 120 grams
  • Heavy cream - 240 ml
  • Eggs - 2 large
  • Erythritol - 50 grams
  • Vanilla extract - 1 teaspoon
  • Unsweetened cocoa powder - 1 tablespoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, combine the cream cheese and erythritol, and blend until smooth.
  3. Add the heavy cream, eggs, vanilla extract, cocoa powder, and a pinch of salt to the bowl, and blend until completely smooth and well combined.
  4. Pour the mixture into two ramekins or small oven-safe dishes.
  5. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  6. Bake in the preheated oven for 30-35 minutes, or until the flan is set but still slightly jiggly in the center.
  7. Remove from the oven and allow to cool at room temperature for about 15 minutes, then refrigerate for at least 2 hours before serving.
  8. To serve, gently run a knife around the edges of the flan and invert onto a plate.
