- Zucchini - 2 medium

- Tomato paste - 2 tablespoons
- Diced tomatoes - 200 grams (1 cup), canned
- Chicken or vegetable broth - 240 ml (1 cup)
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Grated Parmesan cheese - 30 grams (1/4 cup)
- Fresh cilantro - for garnish
Steps
- Spiralize the zucchini to create zoodles and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add the tomato paste, diced tomatoes, chicken or vegetable broth, cumin, chili powder, salt, and pepper to the skillet. Mix well.
- Bring the sauce to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.
- Add the zoodles to the skillet and toss to coat them in the sauce. Cook for an additional 3-5 minutes, until the zoodles are tender but not mushy.
- Remove from heat and stir in the grated Parmesan cheese until melted and combined.
- Serve hot, garnished with fresh cilantro.
