Ingredients

  • Zucchini - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Tomato paste - 2 tablespoons
  • Diced tomatoes - 200 grams (1 cup), canned
  • Chicken or vegetable broth - 240 ml (1 cup)
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese - 30 grams (1/4 cup)
  • Fresh cilantro - for garnish

Steps

  1. Spiralize the zucchini to create zoodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  5. Add the tomato paste, diced tomatoes, chicken or vegetable broth, cumin, chili powder, salt, and pepper to the skillet. Mix well.
  6. Bring the sauce to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.
  7. Add the zoodles to the skillet and toss to coat them in the sauce. Cook for an additional 3-5 minutes, until the zoodles are tender but not mushy.
  8. Remove from heat and stir in the grated Parmesan cheese until melted and combined.
  9. Serve hot, garnished with fresh cilantro.
