- Chicken breast - 300 grams, diced
- Bell pepper (mixed colors) - 150 grams, sliced
- Red onion - 100 grams, sliced
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cream cheese - 100 grams, softened
- Shredded cheddar cheese - 100 grams
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and cook until no longer pink, about 5-7 minutes.
- Add the sliced bell peppers and red onion to the skillet. Season with garlic powder, cumin, paprika, chili powder, salt, and black pepper. Sauté for an additional 5 minutes until the vegetables are tender.
- In a mixing bowl, combine the softened cream cheese with half of the shredded cheddar cheese until well blended.
- Transfer the chicken and vegetable mixture to a baking dish. Spoon the cream cheese mixture over the top and spread it evenly.
