Ingredients

  • Chicken breast - 300 grams, diced
  • Bell pepper (mixed colors) - 150 grams, sliced
  • Red onion - 100 grams, sliced
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cream cheese - 100 grams, softened
  • Shredded cheddar cheese - 100 grams
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and cook until no longer pink, about 5-7 minutes.
  3. Add the sliced bell peppers and red onion to the skillet. Season with garlic powder, cumin, paprika, chili powder, salt, and black pepper. Sauté for an additional 5 minutes until the vegetables are tender.
  4. In a mixing bowl, combine the softened cream cheese with half of the shredded cheddar cheese until well blended.
  5. Transfer the chicken and vegetable mixture to a baking dish. Spoon the cream cheese mixture over the top and spread it evenly.
  6. Sprinkle the remaining shredded cheddar cheese on top of the cream cheese layer.
