Ingredients

  • Cooked chicken breast - 200 grams, shredded
  • Keto-friendly enchilada sauce - 240 ml
  • Cream cheese - 100 grams, softened
  • Shredded cheddar cheese - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the shredded chicken, enchilada sauce, cream cheese, garlic powder, onion powder, cumin, salt, and black pepper until well mixed.
  3. In a greased baking dish, spread half of the chicken mixture evenly across the bottom.
  4. Sprinkle half of the shredded cheddar cheese over the chicken mixture.
  5. Layer the remaining chicken mixture on top, followed by the remaining cheddar cheese.
  6. Bake in the preheated oven for 20 minutes, or until the cheese is bubbling and golden.
  7. Remove from the oven and let it cool for a few minutes.
