Ingredients

  • Almond flour - 120 grams
  • Coconut flour - 15 grams
  • Baking powder - 1 teaspoon
  • Stevia or erythritol - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Eggs - 2 large
  • Unsalted butter - 60 grams, melted
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1 teaspoon (for coating)
  • Coconut oil - for frying

Steps

  1. In a mixing bowl, combine the almond flour, coconut flour, baking powder, sweetener, and salt.
  2. In a separate bowl, whisk together the eggs, melted butter, and vanilla extract until well combined.
  3. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  4. Transfer the dough to a piping bag fitted with a large star tip.
  5. Heat coconut oil in a deep pan over medium heat until it reaches 180°C (350°F).
  6. Pipe 10 cm long strips of dough into the hot oil, cutting them with scissors.
  7. Fry the churros for 2-3 minutes on each side until golden brown and crispy.
  8. Remove the churros from the oil and place them on paper towels to drain excess oil.
  9. In a small bowl, mix cinnamon and sweetener together, then coat the churros in this mixture while they are still warm.
  10. Serve warm with a keto-friendly chocolate sauce or whipped cream if desired.
