- Almond flour - 120 grams
- Coconut flour - 15 grams
- Baking powder - 1 teaspoon
- Stevia or erythritol - 2 tablespoons
- Salt - 1/4 teaspoon
- Eggs - 2 large
- Unsalted butter - 60 grams, melted
- Vanilla extract - 1 teaspoon
- Cinnamon - 1 teaspoon (for coating)
- Coconut oil - for frying
Steps
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, sweetener, and salt.
- In a separate bowl, whisk together the eggs, melted butter, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Transfer the dough to a piping bag fitted with a large star tip.
- Heat coconut oil in a deep pan over medium heat until it reaches 180°C (350°F).
- Pipe 10 cm long strips of dough into the hot oil, cutting them with scissors.
- Fry the churros for 2-3 minutes on each side until golden brown and crispy.
- Remove the churros from the oil and place them on paper towels to drain excess oil.
- In a small bowl, mix cinnamon and sweetener together, then coat the churros in this mixture while they are still warm.
- Serve warm with a keto-friendly chocolate sauce or whipped cream if desired.
