Ingredients

  • Chorizo sausage - 200 grams
  • Bell pepper (red) - 1 medium, diced
  • Bell pepper (green) - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Eggs - 4 large
  • Cheddar cheese - 100 grams, shredded
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced onion and cook until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the chorizo sausage to the skillet and cook until browned, breaking it up with a spatula, about 5-7 minutes.
  6. Mix in the diced red and green bell peppers, cumin, paprika, salt, and black pepper. Cook for another 5 minutes until the peppers are tender.
  7. In a bowl, whisk the eggs and pour them over the chorizo and pepper mixture in the skillet. Stir gently to combine.
  8. Sprinkle the shredded cheddar cheese evenly over the top.
  9. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set and the cheese is melted and bubbly.
