Ingredients

  • 2 large poblano peppers
  • 200 grams ground beef
  • 100 grams cream cheese, softened
  • 100 grams shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced tomatoes (canned)
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro, chopped (for garnish)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Roast the poblano peppers on a baking sheet for about 20 minutes until the skin is blistered and charred, turning occasionally. Remove from the oven, place in a plastic bag to steam for 10 minutes, then peel off the skin and remove the seeds.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add ground beef to the skillet and cook until browned. Stir in the cumin, smoked paprika, salt, and pepper, cooking for an additional 2 minutes.
  5. Remove the skillet from heat and mix in the cream cheese and half of the cheddar cheese until well combined.
  6. Stuff each roasted poblano pepper with the beef and cheese mixture, then place them in a baking dish.
  7. In the same skillet, add the diced tomatoes and simmer for 5 minutes. Pour the tomato sauce over the stuffed peppers.
  8. Sprinkle the remaining cheddar cheese on top of the peppers.
  9. Bake in the preheated oven for 15 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro before serving.
