Ingredients
- 2 large poblano peppers
- 200 grams ground beef
- 100 grams cream cheese, softened
- 100 grams shredded cheddar cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced tomatoes (canned)
- 1 tablespoon olive oil
- 1/4 cup fresh cilantro, chopped (for garnish)
Steps
- Preheat the oven to 190°C (375°F).
- Roast the poblano peppers on a baking sheet for about 20 minutes until the skin is blistered and charred, turning occasionally. Remove from the oven, place in a plastic bag to steam for 10 minutes, then peel off the skin and remove the seeds.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add ground beef to the skillet and cook until browned. Stir in the cumin, smoked paprika, salt, and pepper, cooking for an additional 2 minutes.
- Remove the skillet from heat and mix in the cream cheese and half of the cheddar cheese until well combined.
- Stuff each roasted poblano pepper with the beef and cheese mixture, then place them in a baking dish.
- In the same skillet, add the diced tomatoes and simmer for 5 minutes. Pour the tomato sauce over the stuffed peppers.
- Sprinkle the remaining cheddar cheese on top of the peppers.
- Bake in the preheated oven for 15 minutes or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
