  • Cauliflower tortillas - 4
  • Fresh tomatillos - 250 grams
  • Jalapeño - 1, seeded and chopped
  • Garlic - 2 cloves, minced
  • Onion - 1/2, chopped
  • Chicken broth - 120 ml
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 1 tablespoon
  • Avocado - 1, sliced
  • Cotija cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F) and place the cauliflower tortillas on a baking sheet. Brush with olive oil and bake for 10-12 minutes until crispy.
  2. In a saucepan, combine tomatillos, jalapeño, onion, garlic, and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes until the tomatillos are soft.
  3. Remove from heat and blend the mixture until smooth. Stir in chopped cilantro, lime juice, salt, and pepper to taste.
