- Cauliflower tortillas - 4
- Fresh tomatillos - 250 grams
- Jalapeño - 1, seeded and chopped
- Garlic - 2 cloves, minced
- Onion - 1/2, chopped
- Chicken broth - 120 ml
- Cilantro - 1/4 cup, chopped
- Lime juice - 1 tablespoon
- Avocado - 1, sliced
- Cotija cheese - 50 grams, crumbled
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 200°C (400°F) and place the cauliflower tortillas on a baking sheet. Brush with olive oil and bake for 10-12 minutes until crispy.
- In a saucepan, combine tomatillos, jalapeño, onion, garlic, and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes until the tomatillos are soft.
- Remove from heat and blend the mixture until smooth. Stir in chopped cilantro, lime juice, salt, and pepper to taste.
