  • Bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Diced tomatoes - 200 grams (canned)
  • Chicken broth - 500 ml
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Oregano - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 small, sliced (for topping)
  • Shredded cheese (cheddar or Mexican blend) - 50 grams (for topping)
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes.
  2. Add the minced garlic, diced bell pepper, and diced zucchini to the pot. Cook for another 3-4 minutes until the vegetables are slightly tender.
  3. Stir in the chili powder, cumin, oregano, salt, and black pepper, cooking for 1 minute to release the spices' aromas.
  4. Add the diced chicken breast to the pot, stirring to coat with the spices and vegetables. Cook for about 5 minutes until the chicken is no longer pink.
  5. Pour in the diced tomatoes and chicken broth, bringing the mixture to a boil. Reduce heat and let simmer for 10-15 minutes until the chicken is cooked through and the flavors meld together.
