Ingredients
- Almond flour - 100 grams
- Coconut flour - 30 grams
- Granulated erythritol - 30 grams
- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Egg - 1 large
- Unsweetened almond milk - 30 ml
- Vanilla extract - 1 teaspoon
- Coconut oil - for frying
Steps
- In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.
- In a separate bowl, whisk together the egg, almond milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Divide the dough into 4 equal portions and shape each portion into a flat disc about 1/2 inch thick.
- Heat coconut oil in a frying pan over medium heat. Once hot, carefully place the discs in the oil.
- Fry the buñuelos for about 2-3 minutes on each side or until golden brown and crispy.
- Remove from the oil and drain on paper towels. Optionally, sprinkle with additional erythritol and cinnamon before serving.
