Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 30 grams
  • Granulated erythritol - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Unsweetened almond milk - 30 ml
  • Vanilla extract - 1 teaspoon
  • Coconut oil - for frying

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.
  2. In a separate bowl, whisk together the egg, almond milk, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Divide the dough into 4 equal portions and shape each portion into a flat disc about 1/2 inch thick.
  5. Heat coconut oil in a frying pan over medium heat. Once hot, carefully place the discs in the oil.
  6. Fry the buñuelos for about 2-3 minutes on each side or until golden brown and crispy.
  7. Remove from the oil and drain on paper towels. Optionally, sprinkle with additional erythritol and cinnamon before serving.
