Ingredients

  • Ground beef - 300 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Chili powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Canned diced tomatoes - 200 grams
  • Cream cheese - 100 grams, softened
  • Cheddar cheese - 100 grams, shredded
  • Cilantro - 1 tablespoon, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent.
  3. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  4. Stir in the chili powder, cumin, paprika, salt, and black pepper, mixing well.
  5. Add the canned diced tomatoes (with their juices) to the beef mixture and simmer for 5 minutes.
  6. Remove from heat and let cool slightly before mixing in the softened cream cheese until well combined.
  7. Spoon the beef mixture onto a plate or cutting board and roll into small cylindrical shapes (like enchiladas).
  8. Place the rolled beef enchiladas in a baking dish, seam side down.
  9. Top with shredded cheddar cheese and bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
