- Ground beef - 300 grams
- Olive oil - 1 tablespoon
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Chili powder - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Canned diced tomatoes - 200 grams
- Cream cheese - 100 grams, softened
- Cheddar cheese - 100 grams, shredded
- Cilantro - 1 tablespoon, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the chili powder, cumin, paprika, salt, and black pepper, mixing well.
- Add the canned diced tomatoes (with their juices) to the beef mixture and simmer for 5 minutes.
- Remove from heat and let cool slightly before mixing in the softened cream cheese until well combined.
- Spoon the beef mixture onto a plate or cutting board and roll into small cylindrical shapes (like enchiladas).
- Place the rolled beef enchiladas in a baking dish, seam side down.
