Ingredients
- Ground beef - 300 grams
- Almond flour - 30 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Canned diced tomatoes - 400 grams
- Chicken broth - 100 ml
- Chili powder - 1 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine ground beef, almond flour, egg, garlic powder, onion powder, cumin, paprika, salt, black pepper, and chopped cilantro. Mix until well combined.
- Form the mixture into small meatballs, about 2.5 cm (1 inch) in diameter.
- Heat olive oil in a large oven-safe skillet over medium heat. Brown the meatballs on all sides for about 5-7 minutes.
- Remove the meatballs from the skillet and set aside.
- In the same skillet, add canned diced tomatoes, chicken broth, and chili powder. Stir well to combine.
- Return the meatballs to the skillet and spoon some of the sauce over them.
- Transfer the skillet to the preheated oven and bake for 25 minutes, until the meatballs are cooked through.
- Serve hot, garnished with additional cilantro if desired.
