Ingredients

  • Ground beef - 300 grams
  • Almond flour - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Canned diced tomatoes - 400 grams
  • Chicken broth - 100 ml
  • Chili powder - 1 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine ground beef, almond flour, egg, garlic powder, onion powder, cumin, paprika, salt, black pepper, and chopped cilantro. Mix until well combined.
  3. Form the mixture into small meatballs, about 2.5 cm (1 inch) in diameter.
  4. Heat olive oil in a large oven-safe skillet over medium heat. Brown the meatballs on all sides for about 5-7 minutes.
  5. Remove the meatballs from the skillet and set aside.
  6. In the same skillet, add canned diced tomatoes, chicken broth, and chili powder. Stir well to combine.
  7. Return the meatballs to the skillet and spoon some of the sauce over them.
  8. Transfer the skillet to the preheated oven and bake for 25 minutes, until the meatballs are cooked through.
  9. Serve hot, garnished with additional cilantro if desired.
