Ingredients

  • Jicama - 300 grams (about 1 medium-sized jicama)
  • Ground turkey or chicken - 250 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Shredded cheese (cheddar or Mexican blend) - 100 grams
  • Tomato sauce - 150 grams
  • Avocado - 1, sliced (for serving)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel the jicama and slice it into thin, flat sheets (approximately 1/4 inch thick) to resemble tortillas.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
  4. Add the minced garlic, diced red bell pepper, and ground turkey (or chicken) to the skillet. Cook until the meat is browned and cooked through, about 7-10 minutes.
  5. Stir in the cumin, chili powder, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
  6. Remove the skillet from heat and mix in the chopped cilantro.
  7. In a baking dish, spread a thin layer of tomato sauce on the bottom. Take a jicama slice, add a spoonful of the meat mixture, and roll it up tightly. Place the rolled jicama seam-side down in the baking dish. Repeat until all filling is used.
  8. Pour the remaining tomato sauce over the top of the jicama enchiladas and sprinkle with shredded cheese.
  9. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
  10. Serve hot, garnished with fresh avocado slices.
