Jicama Enchiladas

Ingredients
- Jicama - 300 grams (about 1 medium-sized jicama)
- Ground turkey or chicken - 250 grams
- Olive oil - 1 tablespoon
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Shredded cheese (cheddar or Mexican blend) - 100 grams
- Tomato sauce - 150 grams
- Avocado - 1, sliced (for serving)
Steps
- Preheat the oven to 180°C (350°F).
- Peel the jicama and slice it into thin, flat sheets (approximately 1/4 inch thick) to resemble tortillas.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
- Add the minced garlic, diced red bell pepper, and ground turkey (or chicken) to the skillet. Cook until the meat is browned and cooked through, about 7-10 minutes.
- Stir in the cumin, chili powder, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
- Remove the skillet from heat and mix in the chopped cilantro.
- In a baking dish, spread a thin layer of tomato sauce on the bottom. Take a jicama slice, add a spoonful of the meat mixture, and roll it up tightly. Place the rolled jicama seam-side down in the baking dish. Repeat until all filling is used.
- Pour the remaining tomato sauce over the top of the jicama enchiladas and sprinkle with shredded cheese.
- Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
- Serve hot, garnished with fresh avocado slices.
