- Huitlacoche - 200 grams
- Ground turkey or chicken - 250 grams
- Whole wheat burger buns - 2
- Avocado - 1 medium, sliced
- Red onion - 1/2 medium, thinly sliced
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Greek yogurt - 2 tablespoons (for aioli)
- Chipotle powder - 1/4 teaspoon
Steps
- In a mixing bowl, combine ground turkey/chicken, huitlacoche, minced garlic, cumin, salt, and black pepper. Mix until well combined.
- Divide the mixture into two equal portions and shape each into a patty.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until cooked through and golden brown.
- While the patties are cooking, prepare the lime aioli by mixing Greek yogurt, lime juice, and chipotle powder in a small bowl. Stir until smooth and set aside.
- Toast the whole wheat buns in a separate pan or oven until lightly browned.
- Assemble the burgers by placing the patty on the bottom half of the bun. Top with sliced avocado, red onion, and chopped cilantro, then drizzle with lime aioli.
- Cover with the top half of the bun and serve immediately.
