  • Jalapeño - 1 small, diced
  • Cilantro - 2 tablespoons, chopped
  • Avocado - 1 medium, sliced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Lime - 1, juiced

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes until translucent.
  2. Add the minced garlic and diced jalapeño to the skillet, cooking for an additional 1-2 minutes until fragrant.
  3. Stir in the diced tomatoes, cumin, salt, and pepper. Simmer for about 10 minutes until the mixture thickens slightly.
  4. While the sauce is simmering, heat the remaining tablespoon of olive oil in another skillet over medium heat. Lightly fry the corn tortillas for about 1-2 minutes on each side until they are crispy. Remove and set aside.
  5. In the same skillet, add the cooked black beans and heat through for about 5 minutes, mashing slightly if desired.
  6. To assemble, place a crispy tortilla on each plate, top with a generous scoop of the black beans, then pour the tomato sauce over the beans.
  7. Garnish with sliced avocado, chopped cilantro, and a squeeze of lime juice before serving.
