- Jalapeño - 1 small, diced
- Cilantro - 2 tablespoons, chopped
- Avocado - 1 medium, sliced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Lime - 1, juiced
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced jalapeño to the skillet, cooking for an additional 1-2 minutes until fragrant.
- Stir in the diced tomatoes, cumin, salt, and pepper. Simmer for about 10 minutes until the mixture thickens slightly.
- While the sauce is simmering, heat the remaining tablespoon of olive oil in another skillet over medium heat. Lightly fry the corn tortillas for about 1-2 minutes on each side until they are crispy. Remove and set aside.
- In the same skillet, add the cooked black beans and heat through for about 5 minutes, mashing slightly if desired.
- To assemble, place a crispy tortilla on each plate, top with a generous scoop of the black beans, then pour the tomato sauce over the beans.
- Garnish with sliced avocado, chopped cilantro, and a squeeze of lime juice before serving.
