Ingredients

  • Corn tortillas - 2 pieces
  • Large eggs - 4 pieces
  • Canned black beans - 200 grams, drained and rinsed
  • Feta cheese - 50 grams, crumbled
  • Fresh cilantro - 15 grams, chopped
  • Avocado - 1 medium, sliced
  • Tomato - 1 medium, diced
  • Red onion - 30 grams, finely chopped
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped red onion and sauté until soft, about 3-4 minutes.
  2. Add the black beans to the skillet, season with salt and pepper, and cook until warmed through, about 5 minutes. Remove from heat.
  3. In a separate pan, fry the eggs sunny-side up or to your desired doneness, seasoning with salt and pepper.
  4. While the eggs are cooking, warm the corn tortillas in a dry skillet until pliable, about 1-2 minutes per side.
  5. To assemble, place a warm tortilla on each plate. Spread half of the black bean mixture on each tortilla.
  6. Top each with two fried eggs, then sprinkle crumbled feta cheese, diced tomatoes, and chopped cilantro over the top.
  7. Finish with avocado slices and a squeeze of fresh lime juice. Serve immediately.
