- Corn tortillas - 2 pieces
- Large eggs - 4 pieces
- Canned black beans - 200 grams, drained and rinsed
- Feta cheese - 50 grams, crumbled
- Fresh cilantro - 15 grams, chopped
- Avocado - 1 medium, sliced
- Tomato - 1 medium, diced
- Red onion - 30 grams, finely chopped
- Olive oil - 1 tablespoon
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste
Steps
- In a skillet, heat olive oil over medium heat. Add the chopped red onion and sauté until soft, about 3-4 minutes.
- Add the black beans to the skillet, season with salt and pepper, and cook until warmed through, about 5 minutes. Remove from heat.
- In a separate pan, fry the eggs sunny-side up or to your desired doneness, seasoning with salt and pepper.
- While the eggs are cooking, warm the corn tortillas in a dry skillet until pliable, about 1-2 minutes per side.
- To assemble, place a warm tortilla on each plate. Spread half of the black bean mixture on each tortilla.
- Top each with two fried eggs, then sprinkle crumbled feta cheese, diced tomatoes, and chopped cilantro over the top.
- Finish with avocado slices and a squeeze of fresh lime juice. Serve immediately.
