Ingredients

  • Almond flour - 100 grams
  • Psyllium husk powder - 10 grams
  • Baking powder - 5 grams
  • Eggs - 2 large
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Avocado - 1 medium, sliced
  • Cotija cheese - 30 grams, crumbled
  • Fresh cilantro - 2 tablespoons, chopped
  • Hot sauce - to taste

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt. Mix well.
  2. Add one egg and olive oil to the dry ingredients and knead until a dough forms.
  3. Divide the dough into two equal portions and shape each portion into an oval huarache shape, about 1/4 inch thick.
  4. Heat a non-stick skillet over medium heat and cook each huarache for about 3-4 minutes on each side until golden brown.
  5. In the same skillet, crack the remaining eggs and cook them sunny-side up or to your preferred doneness.
  6. Once the huaraches are ready, place them on plates, top with a cooked egg, sliced avocado, and crumbled Cotija cheese.
  7. Garnish with chopped cilantro and drizzle with hot sauce before serving.
