- Psyllium husk powder - 10 grams
- Baking powder - 5 grams
- Eggs - 2 large
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Avocado - 1 medium, sliced
- Cotija cheese - 30 grams, crumbled
- Fresh cilantro - 2 tablespoons, chopped
- Hot sauce - to taste
Steps
- In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt. Mix well.
- Add one egg and olive oil to the dry ingredients and knead until a dough forms.
- Divide the dough into two equal portions and shape each portion into an oval huarache shape, about 1/4 inch thick.
- Heat a non-stick skillet over medium heat and cook each huarache for about 3-4 minutes on each side until golden brown.
- In the same skillet, crack the remaining eggs and cook them sunny-side up or to your preferred doneness.
