Ingredients

  • Quinoa - 100 grams
  • Water - 250 milliliters
  • Black beans (cooked) - 100 grams
  • Red bell pepper (finely diced) - 50 grams
  • Red onion (finely diced) - 30 grams
  • Garlic (minced) - 2 cloves
  • Cilantro (chopped) - 15 grams
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour (whole wheat or chickpea) - 50 grams
  • Olive oil - 1 tablespoon
  • Burger buns (vegan) - 2
  • Avocado (sliced) - 1/2
  • Salsa (fresh) - 100 grams

Steps

  1. Rinse the quinoa under cold water and combine it with 250 ml of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed.
  2. In a large bowl, mash the black beans with a fork until mostly smooth. Add the cooked quinoa, diced red bell pepper, red onion, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper. Mix until well combined.
  3. Gradually add flour to the mixture until it holds together but is still slightly sticky. Form the mixture into 2 burger patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. Toast the burger buns lightly in the same skillet for 1-2 minutes.
  6. Assemble the burgers by placing each patty on a bun, topping with sliced avocado and a generous spoonful of salsa. Serve immediately.
