- Quinoa - 100 grams
- Water - 250 milliliters
- Black beans (cooked) - 100 grams
- Red bell pepper (finely diced) - 50 grams
- Red onion (finely diced) - 30 grams
- Garlic (minced) - 2 cloves
- Cilantro (chopped) - 15 grams
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flour (whole wheat or chickpea) - 50 grams
- Olive oil - 1 tablespoon
- Burger buns (vegan) - 2
- Avocado (sliced) - 1/2
- Salsa (fresh) - 100 grams
Steps
- Rinse the quinoa under cold water and combine it with 250 ml of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed.
- In a large bowl, mash the black beans with a fork until mostly smooth. Add the cooked quinoa, diced red bell pepper, red onion, minced garlic, chopped cilantro, cumin, paprika, salt, and black pepper. Mix until well combined.
- Gradually add flour to the mixture until it holds together but is still slightly sticky. Form the mixture into 2 burger patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- Toast the burger buns lightly in the same skillet for 1-2 minutes.
- Assemble the burgers by placing each patty on a bun, topping with sliced avocado and a generous spoonful of salsa. Serve immediately.
