Ingredients
- Black beans - 200 grams (cooked and drained)
- Poblano peppers - 2 medium-sized
- Oats - 50 grams (rolled)
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Cumin - 1 teaspoon
- Chili powder - ½ teaspoon
- Salt - ½ teaspoon
- Pepper - ¼ teaspoon
- Olive oil - 1 tablespoon
- Lime - 1 (juiced)
- Avocado - 1 medium (sliced)
- Whole wheat burger buns - 2
- Vegan mayo - 2 tablespoons
- Fresh cilantro - a handful (chopped)
Steps
- Preheat your oven to 200°C (400°F).
- Place the poblano peppers on a baking sheet and roast them in the oven for about 15 minutes, turning them occasionally until the skin is blistered and charred.
- Once roasted, remove the peppers from the oven and place them in a bowl covered with plastic wrap for about 10 minutes to steam. This will help loosen the skin.
- While the peppers are steaming, in a mixing bowl, mash the black beans with a fork until almost smooth, leaving some chunks for texture.
- Add the rolled oats, chopped red onion, minced garlic, cumin, chili powder, salt, and pepper to the mashed beans. Mix well until combined.
- Once the poblano peppers are cool enough to handle, peel off the skin, remove the stems and seeds, and chop them into small pieces.
- Fold the chopped poblano peppers into the bean mixture and form two patties using your hands.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until they are golden brown and heated through.
- While the patties are cooking, mix the vegan mayo with lime juice and chopped cilantro in a small bowl to create the lime crema.
- To assemble the burgers, spread the lime crema on the bottom half of each bun, add the cooked patties, and top with sliced avocado. Cover with the top half of the bun and serve immediately.
