Ingredients

  • Red bell pepper - 1 large
  • Green bell pepper - 1 large
  • Black beans - 200 grams, cooked and drained
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Oats - 50 grams, ground into flour
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2, whole grain preferred
  • Avocado - 1 small, sliced
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Sour cream - 2 tablespoons (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and green bell peppers in half, remove seeds, and place them cut side down on a baking sheet. Roast for 20 minutes or until the skins are blistered and slightly charred.
  3. While the peppers are roasting, heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, sautéing until the onion becomes translucent.
  4. In a mixing bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
  5. Add the sautéed onion and garlic, ground oats, cumin, chili powder, egg, salt, and black pepper to the mashed beans. Mix until well combined.
  6. Remove the roasted peppers from the oven and let them cool slightly. Peel off the charred skin and chop the flesh into small pieces. Add the chopped peppers to the bean mixture and stir to combine.
  7. Form the mixture into two patties.
  8. In the same skillet, add a little more olive oil and cook the patties over medium heat for about 4-5 minutes on each side, until golden brown and heated through.
  9. Toast the burger buns lightly on the skillet or in the oven.
  10. Assemble the burgers by placing the lettuce on the bottom bun, followed by the patty, sliced tomato, avocado, and a dollop of sour cream if desired. Top with the other half of the bun and serve.
