Ingredients
- Pork shoulder - 400 grams
- Achiote paste - 30 grams
- Orange juice - 60 ml
- Lime juice - 30 ml
- Garlic cloves - 2, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paleo-friendly burger buns - 2
- Red onion - 1, thinly sliced
- Cilantro - 1/4 cup, chopped
- Avocado - 1, sliced
- Tomato - 1, sliced
Steps
- In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, salt, and black pepper to create a marinade.
- Cut the pork shoulder into chunks and coat it thoroughly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat your oven to 150°C (300°F). Place the marinated pork in a baking dish, cover tightly with foil, and bake for about 2 hours until tender.
- Remove the pork from the oven and let it rest for 15 minutes before shredding it with two forks.
- While the pork is resting, prepare your paleo-friendly burger buns by lightly toasting them if desired.
- Assemble the burgers by placing a generous amount of shredded pork on each bun, then top with sliced avocado, tomato, red onion, and chopped cilantro.
