Ingredients

  • Pork shoulder - 400 grams
  • Achiote paste - 30 grams
  • Orange juice - 60 ml
  • Lime juice - 30 ml
  • Garlic cloves - 2, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paleo-friendly burger buns - 2
  • Red onion - 1, thinly sliced
  • Cilantro - 1/4 cup, chopped
  • Avocado - 1, sliced
  • Tomato - 1, sliced

Steps

  1. In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, salt, and black pepper to create a marinade.
  2. Cut the pork shoulder into chunks and coat it thoroughly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat your oven to 150°C (300°F). Place the marinated pork in a baking dish, cover tightly with foil, and bake for about 2 hours until tender.
  4. Remove the pork from the oven and let it rest for 15 minutes before shredding it with two forks.
  5. While the pork is resting, prepare your paleo-friendly burger buns by lightly toasting them if desired.
  6. Assemble the burgers by placing a generous amount of shredded pork on each bun, then top with sliced avocado, tomato, red onion, and chopped cilantro.
