Ingredients
- Sweet corn - 200 grams
- Black beans - 100 grams, cooked and drained
- Quinoa - 50 grams, cooked
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 40 grams
- Olive oil - 2 tablespoons, for frying
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- In a mixing bowl, combine sweet corn, black beans, cooked quinoa, red onion, garlic, cilantro, cumin, chili powder, salt, and black pepper. Mash the mixture slightly with a fork, leaving some texture.
- Gradually add the all-purpose flour to the mixture, stirring until a thick batter forms. If too wet, add more flour as needed.
- Form the mixture into two patties, ensuring they hold together well.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown and crispy.
- Toast the burger buns in the same skillet until lightly crispy.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the corn patty, sliced tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your favorite sauce or side.
