Ingredients

  • Sweet corn - 200 grams
  • Black beans - 100 grams, cooked and drained
  • Quinoa - 50 grams, cooked
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 40 grams
  • Olive oil - 2 tablespoons, for frying
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. In a mixing bowl, combine sweet corn, black beans, cooked quinoa, red onion, garlic, cilantro, cumin, chili powder, salt, and black pepper. Mash the mixture slightly with a fork, leaving some texture.
  2. Gradually add the all-purpose flour to the mixture, stirring until a thick batter forms. If too wet, add more flour as needed.
  3. Form the mixture into two patties, ensuring they hold together well.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until they are golden brown and crispy.
  5. Toast the burger buns in the same skillet until lightly crispy.
  6. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the corn patty, sliced tomato, and avocado. Top with the other half of the bun.
  7. Serve immediately with your favorite sauce or side.
