Ingredients

  • Pork espinazo (spine) - 300 grams
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Olive oil - 2 tablespoons
  • Red onion - 1, thinly sliced
  • Tomato - 1, sliced
  • Avocado - 1, sliced
  • Cilantro - ¼ cup, chopped
  • Lime - 1, juiced
  • Burger buns - 2, dairy-free
  • Lettuce - 2 leaves

Steps

  1. In a bowl, combine minced garlic, cumin, oregano, chili powder, salt, and black pepper to create a marinade.
  2. Add the pork espinazo to the marinade, ensuring it's well coated. Let it marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  3. Heat olive oil in a skillet over medium heat. Once hot, add the marinated pork and cook for about 10-15 minutes on each side, or until fully cooked and browned.
  4. Remove the pork from the skillet and let it rest for a few minutes before slicing it into thin strips.
  5. Toast the burger buns in the same skillet for 1-2 minutes until golden brown.
  6. Assemble the burgers: on the bottom half of each bun, layer the lettuce, sliced pork, red onion, tomato, avocado, and cilantro. Drizzle with lime juice.
  7. Top with the other half of the bun and serve immediately.
