Ingredients
- Pork espinazo (spine) - 300 grams
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Olive oil - 2 tablespoons
- Red onion - 1, thinly sliced
- Tomato - 1, sliced
- Avocado - 1, sliced
- Cilantro - ¼ cup, chopped
- Lime - 1, juiced
- Burger buns - 2, dairy-free
- Lettuce - 2 leaves
Steps
- In a bowl, combine minced garlic, cumin, oregano, chili powder, salt, and black pepper to create a marinade.
- Add the pork espinazo to the marinade, ensuring it's well coated. Let it marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Heat olive oil in a skillet over medium heat. Once hot, add the marinated pork and cook for about 10-15 minutes on each side, or until fully cooked and browned.
- Remove the pork from the skillet and let it rest for a few minutes before slicing it into thin strips.
- Toast the burger buns in the same skillet for 1-2 minutes until golden brown.
- Assemble the burgers: on the bottom half of each bun, layer the lettuce, sliced pork, red onion, tomato, avocado, and cilantro. Drizzle with lime juice.
- Top with the other half of the bun and serve immediately.
