- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oats - 50 grams (ground into flour)
- Olive oil - 1 tablespoon
- Whole grain burger buns - 2
- Avocado - 1 (sliced)
- Tomato - 1 (sliced)
- Lettuce leaves - 4
Steps
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine the cooked chickpeas, cooked quinoa, minced garlic, chopped red onion, cumin, chili powder, salt, and pepper.
- Add the fresh spinach and mash the mixture with a fork or a potato masher until it’s well combined but still slightly chunky.
- Stir in the ground oats to bind the mixture together, and let it sit for 10 minutes.
- Divide the mixture into two equal portions and shape them into burger patties.
- Heat olive oil in a skillet over medium heat and cook the patties for about 5 minutes on each side or until golden brown.
- Place the cooked patties on a baking sheet and bake in the preheated oven for an additional 10 minutes to firm them up.
- Toast the whole grain burger buns in the oven for 2-3 minutes.
- Assemble the burgers by placing a patty on each bun, then top with avocado slices, tomato slices, and lettuce leaves.
