  • Quinoa - 50 grams (cooked)
  • Garlic - 2 cloves (minced)
  • Red onion - 50 grams (finely chopped)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oats - 50 grams (ground into flour)
  • Olive oil - 1 tablespoon
  • Whole grain burger buns - 2
  • Avocado - 1 (sliced)
  • Tomato - 1 (sliced)
  • Lettuce leaves - 4

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the cooked chickpeas, cooked quinoa, minced garlic, chopped red onion, cumin, chili powder, salt, and pepper.
  3. Add the fresh spinach and mash the mixture with a fork or a potato masher until it’s well combined but still slightly chunky.
  4. Stir in the ground oats to bind the mixture together, and let it sit for 10 minutes.
  5. Divide the mixture into two equal portions and shape them into burger patties.
  6. Heat olive oil in a skillet over medium heat and cook the patties for about 5 minutes on each side or until golden brown.
  7. Place the cooked patties on a baking sheet and bake in the preheated oven for an additional 10 minutes to firm them up.
  8. Toast the whole grain burger buns in the oven for 2-3 minutes.
  9. Assemble the burgers by placing a patty on each bun, then top with avocado slices, tomato slices, and lettuce leaves.
