  • Quinoa - 75 grams (1/3 cup, cooked)
  • Chipotle peppers in adobo sauce - 1 tablespoon (finely chopped)
  • Garlic - 2 cloves (minced)
  • Red onion - 50 grams (1/4 cup, finely chopped)
  • Fresh cilantro - 15 grams (1/4 cup, chopped)
  • Oats - 30 grams (1/3 cup, ground into flour)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Whole grain burger buns - 2
  • Avocado - 1 (sliced)
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)

Steps

  1. In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, chopped chipotle peppers, minced garlic, chopped red onion, cilantro, ground oats, cumin, coriander, salt, and pepper to the mashed beans. Mix until well combined.
  3. Form the mixture into two burger patties, ensuring they hold together well.

  6. Assemble the burgers by placing a patty on each bun, topping with sliced avocado, lettuce, and tomato.
  7. Serve immediately with your favorite side or dipping sauce.
