- Roasted poblano peppers - 2 medium
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 1/4 cup, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 1/2 cup
- Egg - 1 large
- Olive oil - 2 tablespoons
- Avocado - 1 medium, sliced
- Lettuce leaves - 4
- Tomato - 1 large, sliced
- Whole wheat burger buns - 2
Steps
- Preheat the grill or a non-stick skillet over medium heat.
- In a large bowl, mash the cooked black beans with a fork until mostly smooth, leaving some chunks for texture.
- Roast the poblano peppers over the flame or in the oven until charred, then place them in a plastic bag for 10 minutes to steam. Peel the skin, remove seeds, and chop finely.
- Add the chopped roasted poblano, red onion, garlic, cilantro, cumin, chili powder, salt, and pepper to the mashed black beans. Mix well.
- Stir in breadcrumbs and the egg until combined. Form the mixture into two patties.
- Heat olive oil in the skillet or on the grill. Cook the patties for about 5-6 minutes on each side or until golden brown and heated through.
- Toast the whole wheat burger buns on the grill or in the skillet until lightly browned.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, adding the patty, slices of avocado, and tomato. Top with the other half of the bun.
- Serve immediately with your choice of sides.
