  • Green peas - 200 grams (frozen or fresh)
  • Cooked quinoa - 100 grams
  • Breadcrumbs - 50 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Whole wheat burger buns - 2
  • Avocado - 1, sliced
  • Tomato - 1, sliced
  • Lettuce leaves - 2

Steps

  1. In a saucepan, boil the green peas for about 5 minutes until tender, then drain and let cool.
  2. In a mixing bowl, mash the cooled peas with a fork or potato masher until slightly chunky.
  3. Add the cooked quinoa, breadcrumbs, chopped red onion, minced garlic, cilantro, cumin, salt, and black pepper to the mashed peas. Mix until combined.
  4. Form the mixture into two burger patties.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
  6. While the patties are cooking, toast the whole wheat burger buns until lightly browned.
