- Green peas - 200 grams (frozen or fresh)
- Cooked quinoa - 100 grams
- Breadcrumbs - 50 grams
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Whole wheat burger buns - 2
- Avocado - 1, sliced
- Tomato - 1, sliced
- Lettuce leaves - 2
Steps
- In a saucepan, boil the green peas for about 5 minutes until tender, then drain and let cool.
- In a mixing bowl, mash the cooled peas with a fork or potato masher until slightly chunky.
- Add the cooked quinoa, breadcrumbs, chopped red onion, minced garlic, cilantro, cumin, salt, and black pepper to the mashed peas. Mix until combined.
- Form the mixture into two burger patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
- While the patties are cooking, toast the whole wheat burger buns until lightly browned.
