Ingredients

  • Zucchini - 200 grams, grated
  • Chickpeas - 1 cup, cooked and drained
  • Cornmeal - 50 grams
  • Oats - 30 grams, ground
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons, for frying
  • Whole wheat buns - 2
  • Avocado - 1, ripe
  • Lime - 1, juiced
  • Salt - to taste
  • Tomato - 1, sliced
  • Lettuce - 2 leaves

Steps

  1. In a large mixing bowl, combine the grated zucchini, cooked chickpeas, cornmeal, ground oats, red onion, minced garlic, chopped cilantro, cumin, chili powder, salt, and black pepper.
  2. Mash the mixture with a fork or potato masher until well combined but still chunky.
  3. Form the mixture into 2 equal-sized patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  6. While the patties are cooking, prepare the avocado crema by blending the ripe avocado, lime juice, and a pinch of salt until smooth.
  7. Toast the whole wheat buns on a separate skillet or in a toaster.
  8. Assemble the burgers by spreading avocado crema on the bottom half of the buns, adding the cooked patties, sliced tomato, and lettuce, then topping with the other half of the bun.
