Ingredients
- Peanut butter - 100g
- Cooked black beans - 200g
- Cooked quinoa - 100g
- Chopped onion - 50g
- Chopped garlic - 1 clove
- Ground cumin - 1 tsp
- Smoked paprika - 1 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Ground flaxseed - 2 tbsp
- Water - 3 tbsp
- Breadcrumbs - 50g
- Whole grain burger buns - 2
- Avocado - 1 small, sliced
- Fresh salsa - 100g
- Lettuce leaves - 2
Steps
- In a large bowl, mash the cooked black beans using a fork until mostly smooth.
- Add the peanut butter, cooked quinoa, chopped onion, chopped garlic, ground cumin, smoked paprika, salt, black pepper, ground flaxseed, and water to the mashed beans. Mix until well combined.
- Gradually add the breadcrumbs to the mixture until it holds together but is not too dry.
- Form the mixture into two burger patties.
- Heat a non-stick skillet over medium heat and lightly oil it. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, toast the burger buns until lightly browned.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the peanut patties, sliced avocado, and fresh salsa. Top with the other half of the bun.
- Serve immediately and enjoy!
