Ingredients

  • Peanut butter - 100g
  • Cooked black beans - 200g
  • Cooked quinoa - 100g
  • Chopped onion - 50g
  • Chopped garlic - 1 clove
  • Ground cumin - 1 tsp
  • Smoked paprika - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Ground flaxseed - 2 tbsp
  • Water - 3 tbsp
  • Breadcrumbs - 50g
  • Whole grain burger buns - 2
  • Avocado - 1 small, sliced
  • Fresh salsa - 100g
  • Lettuce leaves - 2

Steps

  1. In a large bowl, mash the cooked black beans using a fork until mostly smooth.
  2. Add the peanut butter, cooked quinoa, chopped onion, chopped garlic, ground cumin, smoked paprika, salt, black pepper, ground flaxseed, and water to the mashed beans. Mix until well combined.
  3. Gradually add the breadcrumbs to the mixture until it holds together but is not too dry.
  4. Form the mixture into two burger patties.
  5. Heat a non-stick skillet over medium heat and lightly oil it. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, toast the burger buns until lightly browned.
  7. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the peanut patties, sliced avocado, and fresh salsa. Top with the other half of the bun.
  8. Serve immediately and enjoy!
