- Cooked quinoa - 100 grams
- Breadcrumbs - 50 grams
- Garlic - 1 clove, minced
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2 units
- Avocado - 1 medium, sliced
- Lime - 1, juiced
- Lettuce leaves - 4
Steps
- Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
- In a mixing bowl, mash the cooked beets until smooth.
- Add the cooked quinoa, breadcrumbs, minced garlic, chopped cilantro, cumin, salt, black pepper, and beaten egg to the mashed beets. Mix until well combined.
- Form the mixture into two patties.
- Once the skillet is hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly on a separate skillet, if desired.
- Assemble the burgers by placing lettuce, the beet patty, slices of avocado, and a drizzle of lime juice on the bottom half of the bun. Top with the other half of the bun.
