  • Cooked beets - 200 grams
  • Cooked quinoa - 100 grams
  • Breadcrumbs - 50 grams
  • Garlic - 1 clove, minced
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten
  • Olive oil - 2 tablespoons (for cooking)
  • Burger buns - 2 units
  • Avocado - 1 medium, sliced
  • Lime - 1, juiced
  • Lettuce leaves - 4

Steps

  1. Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. In a mixing bowl, mash the cooked beets until smooth.
  3. Add the cooked quinoa, breadcrumbs, minced garlic, chopped cilantro, cumin, salt, black pepper, and beaten egg to the mashed beets. Mix until well combined.
  4. Form the mixture into two patties.

  6. While the patties are cooking, prepare the burger buns by toasting them lightly on a separate skillet, if desired.
  7. Assemble the burgers by placing lettuce, the beet patty, slices of avocado, and a drizzle of lime juice on the bottom half of the bun. Top with the other half of the bun.
