- Pineapple - 100 grams (fresh or canned, diced)
- Achiote paste - 30 grams
- Garlic - 2 cloves (minced)
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Burger buns - 2 (whole grain recommended)
- Red onion - 50 grams (sliced)
- Cilantro - 20 grams (chopped)
- Avocado - 1 (sliced)
- Lime - 1 (for juice)
Steps
- In a bowl, mix the achiote paste, minced garlic, cumin, oregano, salt, and black pepper with olive oil to form a marinade.
- Cut the pork shoulder into small cubes and add to the marinade, ensuring all pieces are coated. Let it marinate for at least 15 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the marinated pork and cook for about 10-12 minutes, stirring occasionally until cooked through and slightly caramelized.
- While the pork is cooking, grill or pan-fry the pineapple until caramelized, about 3-4 minutes on each side.
- Toast the burger buns lightly on the grill or in a pan.
- Assemble the burgers by placing the cooked pork on the bottom half of each bun, followed by grilled pineapple, sliced red onion, avocado, and chopped cilantro. Squeeze fresh lime juice on top.
